Great Find, Fire-Roasted Pepper & Habanero Salsa

Target is by far my favorite store. I probably go there twice a week, AT LEAST. On my most recent trip I definitely found a gem.
I love everything spicy! This salsa has just the right amount of kick to it. I ate almost half of the jar in one sitting! Ellie wanted to try some too.

Easy Crock-pot Pot Roast

Easy Crock-pot Pot Roast 

Crock-pot meals are by far my favorite! You make it in the morning and voila, Dinner is ready 6 hours later! I got this very simple recipe from my older sister.  You should definitely add this meal into your rotation!

Ingredients:
  • 1/2 Yellow Onion
  • Baby Carrots
  • 4 Red Potatoes
  • 1 Packet of Italian Dressing
  • 1 Packet of Ranch Dressing
  • 1/3 Cup of Olive Oil
  • 1 1/2 Cups of Water
  • Pepper to taste
  • Chuck Roast


1.) Cut the onions, and red potatoes into cubes- Set aside
2.) In a small bowl combine the Italian dressing packet and a Ranch dressing packet, oil and water. Stir until thoroughly combined.
3.) Place the chuck roast in the bottom of the crock-pot. Pour about half of the Ranch dressing/ Italian dressing mixture onto the meat.
4.) Add the potatoes, Onions and Carrots on top of the meat and pour the rest of the ranch dressing/ Italian dressing mixture on top.
5.) Cook on high for 5 1/2 hours.
6.) Serve and Enjoy! :)




Hiking Koko Head Yesterday


Yesterday my friend Telly, Matt and I went and climbed Koko Head. It was so challenging! Matt and Telly had climbed it before but it was my first time. 

Koko Head is like a gigantic stair master a total of 1,050 steps to the top. 


At around step 500 there is a bridge that is nothing more that a railroad track above a drop off. I ended up scooting on my butt across it because my legs were too tired to stand.

Here is the view from the top! Isn't it BEAUTIFUL?! I love Hawaii!
